Black Bean Brownies

I hope you are all having a wonderful Holiday Season and I wish you a happy and healthy 2016! Again, I have been busy and neglecting this corner of the world. But I am back with a delicious recipe to satisfy your sweet cravings, without feeling dragged down. Onto these killer black bean brownies...

Have you ever had black bean brownies? I always thought, they are worth a try but there is no way they will taste like brownies. How wrong was I? So wrong. If you haven't given them a try, I really encourage you to! You really can trick someone into thinking they are regular brownies.

I read through a few recipes and kept wanting to switch out an ingredient or change something to make them even better so below is what I came up with. I really do think they are delicious. They totally hit your sweet tooth without all the guilt!

Black Bean Brownies

Ingredients
  • 1 (15 oz) can of black beans
  • 2 eggs
  • 1/2 cup cacao powder
  • 1/2 maple syrup (can be substituted with honey)
  • 1/3 cup coconut oil
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1 tablespoon vanilla extract

Directions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together (except for cacao nibs) in a blender until smooth.
  3. If using cacao nibs, stir these into the wet mixture. 
  4. Pour into greased muffin tins or baking pan. 
  5. Bake for 18 - 20 minutes - until toothpick comes out clean. If using a 8" x 8" baking pan, cook for 30 - 35 mins. 
  6. Cool and enjoy! 
  7. I stored these in an airtight container in the refrigerator for a few days... they didn't last much longer than that!
  8. After refrigerated, warm in the microwave to enjoy just like oven ready!
