Remember that delicious Guilt-free Banana Peanut Butter Ice Cream I posted a while ago? Well if bananas aren't quite your thing... this might be right up your alley. Unless your lactose intolerant (sorry!).

 

I can't take all the credit for this one. My mom actually told me about this new recipe find a few weeks ago and I kind of turned my nose. Don't get me wrong, if you know me well enough, you know ice cream is one of my favorites, any time of day/year. This recipe has two ingredients, cottage cheese and frozen fruit of your choice - I love fruit and cottage cheese but to me this just sounded wrong. My mom came to visit us this past week and recommended we try it. I thought, why not. And how my skepticism was wrong - it is delicious! And so creamy without the guilt!


As mentioned above, the recipe is simple, one part cottage cheese (unsalted!), one part frozen fruit. We started with one cup of each, this was enough for both of us and we had a little extra to freeze for the next day. (However, I wouldn't recommend freezing it - just indulge). The consistency isn't quite the same after it is frozen - it became a bit icy the next day. We used a mix of frozen fruit but you could use any kind of fruit; blueberry, blackberry, strawberry, mango, etc. And make sure to get unsalted cottage cheese - who wants salty ice cream? (Unless it's salted caramel that is). The ice cream is sweetened naturally from the fruit but if you are looking for a bit more sweetness, add in some honey!

 

With the warm weather teasing us, you should probably stock up on cottage cheese and frozen fruit for delicious and guilt free ice cream this summer!
