Quick and Easy Hummus

This hummus recipe is easy, quick and tastes so fresh! I acquired this recipe from a friend of mine after she raved about how easy it is to make and how good it is. Like most hummus recipes, this recipe does not call for tahini - thank goodness! For some reason, I have a hard time finding tahini in the grocery store. I usually always have the below ingredients on hand so it makes it even easier to whip it up for a snack! I hadn't made this recipe in a while until my husband actually requested it. He loves hummus and he knows this one isn't full of extra fillers! Similarly to most of my recent favorite recipes, everything can be thrown in the Vitamix or any blender to cream together quickly!


Ingredients
1 cup non-fat yogurt
2 cans chickpeas
1-2 lemons to taste
3-4 roasted garlic bulbs to taste
1 tbs cumin
salt and pepper
olive oil

Directions
- Mix all of the ingredients together in a blender until desired consistency is reached.
- Enjoy!

Of course I made some substitutions...
- We didn't have plain yogurt so I used Greek yogurt instead.
- We also didn't have any fresh lemons so I used 3 tbsps of lemon juice. 
- We bought a Costco size jar of minced garlic that I feel will last a lifetime so I try to use it whenever possible. If you use fresh garlic instead of roasting garlic bulbs, use about 4 cloves. The hummus will have a more distinct garlic favor instead of the subtle garlic undertone the roasted garlic provides.
