No-Bake Energy Bars

One of my favorite snacks are these amazing, guilt-free energy bars. I know there are a ton of variations out there but this is my go to!

I stumbled across this recipe online a few years ago and then later got to meet the creator, Douglas McNish, at a raw food show in Toronto. I bought his cookbook and have made many of his flavorful, raw recipes since. If you are looking for a raw cookbook, I definitely recommend it (available here)!

The original Morning Energy Bar recipe can be found here. This is one recipe I usually follow to a T but when I was craving these bars earlier this week and was lacking a few ingredients, I improvised and made a few substitutions. Below is what I ended up with.


Ingredients
1 cup pitted dates
1 tbsp raw cacao powder
1.5 tbsp honey
1 tbsp water
1⁄4 cup almonds
1⁄4 cup peanuts
1.5 tbsp chia seeds
Pinch fine sea salt

Directions
-          The original recipe recommends that you blend the wet and dry ingredients separately before combining them however, I threw everything into the Vitamix together.


-          I had to scrap down the sides once or twice but it was a lot easier (and quicker) then blending the ingredients separately.


-          Then, scoop the mixture and mold the bars into a 1” thick rectangle. Since the mixture is a bit sticky, I find it is easiest to mold the bars using wax or parchment paper. I do this by laying the mixture out over parchment paper, folding the paper over the mixture and pressing down to mold the bars evenly without a big mess!


-          Cut out individual bars, wrap them in wax paper or saran wrap and toss them in the fridge until ready to enjoy! I often grab a bar in the morning to take to work with me. The bars keep well throughout the day when they are not refrigerated.
