Homemade Peanut Butter

January 8, 2015

As I have mentioned before, I love nut butters…almond, peanut, cashew, you name it. Maggie, my four legged baby, loves peanut butter so I whipped up a fresh batch for her recently. Below is the recipe I used with my Vitamix. I don’t like to add any extra oil or flavoring to my peanut butter but, feel free to make it your own with coconut oil, flavors or a variety of other nuts!

2 cups of unsalted peanuts

- Place peanuts in Vitamix
- I keep the speed around 1-3. I find if I turn it up too high, I have to stop the Vitamix and scrape the sides. If you let the machine run on a lower setting it mixes the peanuts evenly, in under a minute! You may need to scrape the sides once but that’s it!

A few tips you might find helpful:
  • I find it works best when you use at least 2 cups of peanuts (so that the blades of your blender are covered). If you try to make less than this, you may have to scrape down the sides a few more times! And if you are anything like me, I like to turn on the Vitamix and just let the magic happen.
  • I store my peanut butter in the fridge so it stays fresh longer.
  • If you prefer saltier peanut butter, add salt or use salted peanuts.
  • If you like crunchy peanut butter, don’t blend until smooth or add in extra peanuts at the end.
Enjoy by the spoonful or make my Guilt-free Banana Peanut Butter Ice cream!
