Quick and Easy Salmon

As a kid I always loved cooking and baking with my Mom, Dad and both of my Grandmothers. All four of which are great cooks, who I have had the opportunity to learn many great tips and tricks in the kitchen from.

As time goes on I have realized how true the statement, the apple doesn't fall from the tree is. When I used to cook with my mom, she would always tell me what we needed next or how much of what ingredient to use. She would usually just make the recipe up as we went or she knew the recipe off by heart but was always making different variations or improvements. This became a problem when I went to university. I always knew roughly what the recipe called for but when I wanted to make her delicious homemade lasagna, pasta sauce or my favourite chicken dish I found myself requesting the recipe, which didn't actually exist. So then I would get an email indicating, a bit of this and a bit of that, add more if it doesn't taste just right. But it never seemed to taste exactly how hers did. Maybe she did this on purpose...

Anyways, back to the apple analogy. I've realized I do this. I take a standard recipe, sometimes make it according to the recipe but more times than not, I modify it or make my own version completely. I love experimenting and trying new things in the kitchen. My husband loves to cook as well so we often create things together, each adding our own flare. However, I am going to have to make sure I document my recipes more carefully so I have accurate recipes to share with you.

I generally eat pretty healthy/clean with the exception of a cupcake or sweet here and there.

Since the weather this weekend was beautiful and we love being able to use the BBQ, I am going to share a salmon recipe I made. I have always enjoyed this salmon - It's very quick, easy and can be baked in the oven or on the grill! My best friend wasn't the biggest seafood fan but was open to trying salmon a few years ago, she loved it and asked me for the recipe the following week. I hope you enjoy it as much as she did!


Ingredients: (for 2 salmon steaks)

1 tbsp olive oil
1 tsp dried basil
1 tsp garlic powder
1/2 tsp pepper
1 small tomato, diced
1/4 Spanish onion, diced

 Directions:
  1. Preheat oven to 350*F, or set your BBQ to medium heat.
  2. Prepare foil sheets to wrap each salmon in a foil package, place salmon on foil sheet.
  3. Drizzle olive oil, basil, garlic, pepper, tomato and onion on salmon. 
  4. Wrap foil around salmon so it is sealed, place in oven/BBQ.
  5. Cook for 20-25 minutes. Depending on the thickness of your salmon, you may need to adjust the time. 
I had this salmon with salad and brussels sprouts (recipe below).


Ingredients:

2 handfuls of brussels sprouts 
1 tbsp coconut oil
1 tsp garlic powder
Salt and pepper

Method:
  1. Cut the ends of the brussels sprouts off and cut in half.
  2. Place coconut oil in frying pan and bring to medium-low.
  3. Add the brussels sprouts, garlic and salt and pepper.
  4. Cook for 20 minutes, until desired level of crispness.
